Honestly, I've never been a huge Valentines Day person. I much more prefer the day after Valentines Day, when all of the chocolate goes on sale. However, in an effort to make this day a tad more special I had an idea to bring some love to the breakfast table.
I first stumbled across this scone recipe in Taste of Home's Dec/Jan 2012 edition and have never made another scone recipe since. The recipe they featured was cinnamon chip, but what's Valentines Day without some dark chocolate? All I did was swap out the cinnamon chips for Hershey's dark chocolate chips.
- Pastry cutter (or two butter knives)
- 1 Large and 1 small mixing bowl
- Various measuring cups and spoons
- Cookie pan
- 2.5 cups of all purpose flour
- 1/3 cup sugar
- 3 tsp. baking powder
- 1 tsp. cinnamon
- 1 stick (1/2) cold butter (I can't stress the cold enough. Leave it in the fridge until you have to mix it)
- 1 cup of Hershey's dark chocolate chips
- 1 cup of whipping cream (I use half and half also)
- 1 egg
- 2 packets of raw coarse sugar
In your large bowl, combine the flour, sugar, baking powder and cinnamon. Next, cut in the butter. I suggest you cut the stick of butter into pieces and then cut in until it resembles a course crumb. If you don't have a pastry cutter, you can use two butter knives, using a cross cute motion to divide the butter pieces.
Next, whisk the egg and most of the cream or half and half together. You will want to save back about a tablespoon of half and half for later. Stir in the liquid with the crumb mixture. It will begin to get thick, so some light hand kneading will be required. In order to keep the butter from melting, I rinse my hands under cold water. Keeping the butter cold is key to having a flaky pastry.
Knead the dough on a flat, floured surface (about 10 times) and pat into two 4-5 inch circles. Cut into 6 wedges each. Brush with remainder half and half and sprinkle with the course sugar. Separate the wedges and place on cookie sheet.
Bake at 400 degrees for 14-16 minutes and viola. Enjoy your Valentines Day morning with some chocolatey, flakey scones along with your coffee.
